Case Consultation and Supervision

Supervision is a space to get feedback on clinical cases, expand your skills in providing culturally relevant & trauma-informed nutrition care, and to self-reflect on your clinical process. Available for groups or individuals.

Project Management

I can bring your food or nutrition-related project, event, or program to life with creative input and timely delivery. With a background in non-profit event planning, fundraising, and project management, I work with short-term and long-term partners to provide impactful nutrition programming.

Writing or Editing

I take nutrition communications seriously! Making sure evidence-based nutrition information reaches the public is a key part of my mission. I am happy to review or contribute to your writing projects with a balanced, objective, and friendly tone.

Select Projects and Collaborations

Nutrition program development by Eling Tsai registered dietitian

With the support of Ample Table for Everyone, I developed a series of free nutrition education lessons for mothers and kids/caregivers. Through videos and worksheets, these lessons are being distributed to community centers serving food insecure populations in NYC.

With a small team of Taipei-based dietitians, I helped co-found Little Kitchen (食農小廚房) in Taipei, Taiwan. It was a 12-week after-school cooking program for elementary students, focusing on introducing cooking techniques and new ingredients to children.

Nutrition program management and open space advocacy

Brooklyn Queens Land Trust is a volunteer-led organization that conserves and preserves open space as community gardens in Brooklyn and Queens. I served as the Board Treasurer for three years, raising city funds and managing contracts of $100,000+ per year to support community gardens.
